There was a quick clip where I saw him pulling out an old fret, but that was all.
As you say, it was probably all recorded but was edited out in post production.

Yes, my brother pointed that out to me on the phone this morning! He also noticed, as did I but forgot to mention it, that when the luthier said he had finished, he actually hadn't - there was still a knob missing, no pickguard, and the MOP on the inlay was incomplete. But all this had been rectified when we saw the owner playing it at the end.
